National boxing champion, Michelin-trained chef, award-winning food innovation founder and survivor of Cushing’s disease caused by a pituitary brain tumour.
After three brain surgeries in two years, Emma now advocates for earlier diagnosis of rare diseases, co-leads two Innovate UK-funded food technology projects at Imperial College London, and is developing her memoir with bestselling ghostwriter Andrew Crofts.
Emma's Story
From a family business on Ireland’s northwest coast to boxing rings, professional kitchens, courtrooms and operating theatres, Emma’s life has been shaped by resilience, reinvention and an unwavering determination to challenge expectations.
Born into a family of entrepreneurs and raised as the eldest of five children, Emma learned leadership early. She went on to become one of Ireland’s pioneering female boxing champions, a national team captain, and later built and led her own award-winning restaurant before creating an entirely new category of vegan meats through her food innovation company.
Her journey has also included a four-year High Court battle against Rupert Murdoch’s newspaper group, which she initiated and ultimately won in 2024, as well as a life-changing diagnosis of Cushing’s disease caused by a pituitary brain tumour that led to three brain surgeries in two years.
Today, Emma combines her experience across sport, business, innovation and advocacy to help build a healthier, fairer and more innovative future.

MEMOIR
Developing a memoir with bestselling ghostwriter Andrew Crofts exploring identity, boxing, entrepreneurship, media power, resilience, rare disease, and the four-year High Court battle Emma initiated against Rupert Murdoch’s newspaper group.
INNOVATION
Co-leading two Innovate UK-funded food technology projects at Imperial College London while helping bridge the gap between scientific research and commercial impact.
